Balsamic vinegar

Balsamic vinegar is one the gems of the worldwide famous Italian cuisine. Originated from Modena, Emilia Romagna, in Italy, genuine balsamic vinegar is a pure artisan product requiring real experience, savoir-faire and craftmanship. First, grape must are simmered to make a concentrate. Like for wine, the concentrate is then carefully matured with vinegar in 5 different wood barrels, which size is progressively decreasing. Each barrel is made of different and specific wood from chestnut tree , cherry tree, oak tree, juniper and mulberry. Each of them infuses different flavors and aromas at each different stage of the aging process. According to the age of the balsamic vinegar, the taste will be very different. 

How does balsamic vinegar mature?


Time brings subtility, sweetness, thicker texture and depth to the taste. With time, balsamic vinegar becomes a pure nectar developing increadible aromas of caramel, hazelnuts and woody flavors. Balsamic vinegar can be enjoyed with olive oil as dressing, but also as sauce once reduced, or as a sweet touch with foie gras, cheese or even strawberries.
